ANTIPASTA (OLIVE MIX)
Bruschetta - Cut French Bread crossways, about 1/4" thick / toast both sides until crisp / top with lo-fat pepper jack cheese and a thin layer of mozzarella / add 1 TBL finely chopped onion, a thin slice of tomato, 1 tsp. of Antipasta mix, then top with Parmesan cheese / broil app. 2 minutes at a low temperature.
Muffaletta - Slice your choice of bread in half and toast lightly / apply mayo (and if you like, mustard) on both sides / add one layer of provolone and one layer of lo-fat pepper jack cheese / add one layer of ham, roast beef or any other meat and a scoop of Antipasta mix / bake at 350◦ for about 5 minutes.
You can also add the Antipasta mix to deviled eggs, ground beef (keeps it moist and tasty), baked potatoes, salads, or anything else that needs an extra “kick”!
OLIVE OIL (SICILIAN OR CAJUN)
Easy Fish Recipe- Place fish (suggestion: tilapia) in a broiler pan / Cover the fish and the bottom of the pan with oil / Add 3-4 pats of butter (you can substitute plain yogurt if you like), and any seasonings you wish to add (if any) / Broil or bake (at 325◦) for 10-12 minutes.
BALSAMIC VINEGAR
Delicious (and gorgeous!) dessert - Mix 1 lb. Mascarpone cheese, 1/4 cup powdered sugar, and 2 TBLs of hazelnut syrup or liqueur of your choice (Amaretto, etc.) / Spread half the mixture on a serving tray, about 1/2-inch thick / Spread a thin layer of raspberry preserves on top / Take 1 cup pecans (previously soaked in a little hazelnut syrup) and drain them / Sprinkle half the pecans on top of preserves / Drizzle a small amount of Balsamic Vinegar over this / Spread remaining Mascarpone over this layer, then another layer of raspberry spread / Top with fresh berries - strawberries, raspberries, blackberries, etc.) - starting with a cluster of purple seedless grapes (placed around the edge), for a "cascading" design / Sprinkle remaining pecans on top; drizzle a little more Balsamic Vinegar over this / Serve with plain crackers, toast points, etc. NOTE: Can also be served in individual stemmed glasses or dessert plates with ladyfingers - yum!!
